Stuffed Squid - Japanese Recipe

4 squids
3 cups water
1/2 cup sake
3 tbsps soysauce
3 tbsps mirin
For filling: chicken breasts (boneless & skinless)
1/2 cup minced onion
1 egg
5 tbsps flour
1 tbsp soy sauce

Remove legs from squids and chop them into small pieces. Mince chicken breast and add flour, minced onion, soysauce, egg, and chipped squid legs and mix well. (for filling) Stuff the filling in each squid and close the pocket using a toothpick. Make a couple of cuts on top of each squid. Put water, sake, mirin, and soysauce in a pan. Add squids in the pan and simmer on low heat for 30 minutes.
